Day 4: Gotta Get Some Go-To’s

Today’s highs were in the mid-90s in central North Carolina, with predictions for 106 over the next few days! Scary stuff.

Usually, this is weather for pulling out the no-thought dinner staples—pasta with herbs, cold cuts, even a bowl of cereal with almond milk. With all of those things now off-limits, it’s time to come up with some new mindless meals.

The guys did just fine with freezer leftovers. I wound up wandering the aisles of the food co-op, then coming home to experiment.

The result was a rather odd salad of mung bean threads and veggies on lettuce. It has promise, but needs work. For sauce, I used the soy-less “soy sauce” from Chloe Coscarelli’s  vegan cookbook Chloe’s Kitchen, mixed with brown sugar, lime juice, and balsamic. Too sweet and needs some zing, but it’s a start.

Here’s the photo. I think I’m going to dispense with the daily diet log, though. It’s getting kind of repetitive.

What is EosGirl avoiding? Here’s the latest on my diet.

Keep your twitter peeps updated on how things go! I like reading about your cooking experiments and definitely want to hear about the successes!!! I need some new recipes to add to my repertoire. FYI, 101cookbooks.com is a really great resource for healthful cooking with alternative ingredients.

Hi, Kelly! What a nice comment. Gosh, it’s helpful not to be alone in this! 101cookbooks is GORGEOUS! Wish I weren’t at work–I’d go move in there for a while. Hope to have some actual recipe successes to share before too much longer. In the meantime, will keep sharing the near misses.
