Day 4: Gotta Get Some Go-To’s

Today’s highs were in the mid-90s in central North Carolina, with predictions for 106 over the next few days! Scary stuff.

Usually, this is weather for pulling out the no-thought dinner staples—pasta with herbs, cold cuts, even a bowl of cereal with almond milk. With all of those things now off-limits, it’s time to come up with some new mindless meals.

The guys did just fine with freezer leftovers. I wound up wandering the aisles of the food co-op, then coming home to experiment.

The result was a rather odd salad of mung bean threads and veggies on lettuce. It has promise, but needs work. For sauce, I used the soy-less “soy sauce” from Chloe Coscarelli’s  vegan cookbook Chloe’s Kitchen, mixed with brown sugar, lime juice, and balsamic. Too sweet and needs some zing, but it’s a start.

Here’s the photo. I think I’m going to dispense with the daily diet log, though. It’s getting kind of repetitive.

    Keep your twitter peeps updated on how things go! I like reading about your cooking experiments and definitely want to hear about the successes!!! I need some new recipes to add to my repertoire. FYI, is a really great resource for healthful cooking with alternative ingredients.

    Hi, Kelly! What a nice comment. Gosh, it’s helpful not to be alone in this! 101cookbooks is GORGEOUS! Wish I weren’t at work–I’d go move in there for a while. Hope to have some actual recipe successes to share before too much longer. In the meantime, will keep sharing the near misses.
